Spaghetti with Smoked Cheese and Tomato Sauce (Vegetarian)

One of my all-time favourite combinations. The cheese and tomato sauce is rich and melts all over the spaghetti. This is a rich and filling meal that I'd definitely classify as comfort food! 🙂
Some additional tips:
1) Add whole garlic cloves to the pot in which the spaghetti is cooking. This gives the meal additional texture (the soft and paste-like consistency of cooked garlic) and makes the spaghetti more aromatic.
2) Quickly fry up some cherry tomato halves over high heat (and with little oil) and serve on top of the spaghetti. It's visually appealing, tasty, and lifts the dish up with a fresher flavour.
3) Add a slice of butter to the sauce while it's cooking if you want it to be more rich and creamy. The cheese is, in my opinion, enough but the butter adds a different quality to the sauce.

Finely slice the onion and the garlic. Grate the cheese and, optionally, some lemon zest.

Fill a pot with water, add salt and bring to a boil. Cook the spaghetti until it's al dente.

While the spaghetti is cooking, coat a pan with olive oil. Fry the onion and garlic until the onion softens up and add a dash of balsamic vinegar. Then, add the tomato sauce to the pan and, optionally, some tomato paste. Add herbs and spices (I used salt, pepper, cayenne pepper, basil, chives and thyme). Optionally, add some lemon zest, to give the meal a more lively flavour. Simmer for 3-5 minutes and then add the grated smoked cheese. Simmer and keep stirring until the cheese melts.

Turn off the heat and serve the dish. Decorate with basil or chives. Grate some of the smoked cheese over the spaghetti, also for decoration. Enjoy your meal! 🙂
