Cut Ash Gourd Into Medium Size Cubes. And slightly prick them with fork.

Take one Large Bowl and add our pricked Cubes into it and add enough water to Cover them. Add Lime in it and mix it well. Cover it with lid and keep it aside for 4-5 hrs or until it gets firm.

Boil water in large pot and add alum powder in it. Alum will work as whitener. Meanwhile Strain out water from cubes. Wash and squeeze all water from them thourghly so no traces of lime remains and add them in boiling water. Cook them until cubes become translucent. Then strain out water again from cubes and keep them aside.

In another Nonstick Pot Add Sugar, lemon juice and around 3 cup of water and cook sugar syrup until it reaches one thread consistency. Skim off any foam appeares on surface. Put flame on low and add our cooked Melon cubes in syrup. At this stage add saffron and cardamom essence and let them cook for another 4-5 mins. Take pieces out off syrup and add sliced dry fruit on top of it.

Serve them cold.
