Sephymuffin's Cinnamon Muffins

This recipe is super easy to throw together and it's butter-free, which is nice (at least to me). I never can seem to stock enough butter in my house so when I feel like baking, it's nice to have a delicious muffin recipe that doesn't call for an ingredient I don't have at the time! These are melt in your mouth, I promise. 🌟🌟🤗

This recipe is super easy to throw together and it's butter-free, which is nice (at least to me). I never can seem to stock enough butter in my house so when I feel like baking, it's nice to have a delicious muffin recipe that doesn't call for an ingredient I don't have at the time! Preheat the oven to 375ºF. Grease 15-18 muffins cups. (OR 6, if the muffin cups are larger.) In a bowl, combine the flour, sugar, baking powder, cinnamon and salt. Stir together to blend.

In another bowl, beat together the milk, vegetable oil and eggs. Make a well in the center of the dry ingredients and add the wet ingredients. Stir just until combined - *don’t overmix!*

Divide the mixture evenly between the prepared muffin cups.

🌟🌟Optional: sprinkle however much white sugar or brown sugar you'd like on top of the muffin batter in the tins. Once baked, the sugar will melt and form a sugary, crunchy top. It's highly recommended!

Bake the muffins until a toothpick inserted in the center comes out clean, 13-15 minutes (20 minutes if larger muffins).
