A healthy and alternative way of serving your yam. It taste amazing. At first i was a little afraid to try frying yam in palm oil but to my surprise it is superb. Let alone the sauce it a blast. You'll should try it

In a pot, heat oil, add grated garlic and scotch bonnet and fry

Add onion and saute till tender, add red bell pepper and cook for some seconds

Add tomatoes and fry for 1 min, add water or stock and bring to a boil.

When boiling, season to taste, add the Moringa leaves mix, cover and allow to simmer on medium heat.

Mix 1 tbsp corn flour with 1 tbsp water, pour into sauce when leaves are tender, reduce heat to low cover and simmer for 5 secs.

Remove from heat and serve. Just before serving drizzle some soy sauce.

For The Yam : peel yam, wash and cut into desired shape and size. Place in a pot and bring to boil with salt and sugar, drain when cooked. Heat palm oil in a pan and fry on medium heat, drain and serve warm
