Cooking Instructions

Cut cucumber, carrot,and tomatoes in julienne means long shape and keep ready.First for making dips take out mango pulp and soak tamarind in half cup of water.

For mango mint dip in a mixie jar add mango pulp,green chilli paste(use how spicy u want) I have taken only 1 tsp,1 garlic clove and some mint leaves and grind them and later add salt.

For peanut dip in a mixie jar add roasted peanut,tamarind pulp,green chilli paste and salt and grind into fine and smooth paste.for making noodle I am using knorr cheese and herbs noodles instead of plain noodles it will give more taste.

Cook noodles till water gets soaked and noodles gets cooked.Next take rice paper sheet and dip into water holding with your fingers for a second and place the sheet on wooden chopping board dont use anything else otherwise it will get stick now place the cucumber,carrot,tomato pcs.

And last place noodles in small quantity now fold the sheet from both the sides first and then roll tightly and close and make this process for the rest of the rolls and cut in centre and make 2 pcs and serve with dips made of mango mint chilli dip and peanut dip and enjoy the different and delicious taste of summer rolls which is healthy too.

This time I used canned young (mini) corn, but crab-flavoured kamaboko and okra taste delicious and also look beautiful when the spring rolls are sliced in half.It's quicker to rehydrate the rice paper wrappers in hot water, but if they get too soft, they are hard to handle. So I think it's better to rehydrate them in cold water until you get the hang of it to avoid mistakes. If the rice paper wrappers are still too stiff to roll, wait a little until the moisture from the ingredients soften them. They will soon be soft enough to use. For 10 rolls. I watched Ainsley Eats the Streets show. In the Malaysia episode, he made this dish using something looked like lumpia wrapper. The dish is called Popiah in Malaysia. He used crab meat. And something called shrimp paste. It inspired me to try the recipe. But of course I had to make few changes to the ingredients. I used shrimps and artificial crab meat. Had to omit the shrimp paste. Made a dipping sauce with sweet tamarind. And used Vietnamese rice paper because I couldn’t tell if the lumpia wrapper that I saw in the store (in the package) would be thin enough to eat it raw. 2choi -
