For the basic filling: Slice the onion into thin strips and sauté until translucent. Add the diced tomatoes and cook until they release their juices and are partially cooked. Add the chopped chiles and corn, stirring until everything is well combined. Add the shredded chicken and a little of the chicken broth. Taste and adjust the salt, adding chicken bouillon powder if needed.

To assemble the Pastel Azteca: Place a layer of tortillas in a baking dish, then cover with a layer of the basic filling.

Add a layer of cheese, then a layer of sour cream.

Repeat these steps until you have 3 layers of each, finishing with a layer of sour cream on top.

Bake at 350°F (180°C) for 15 minutes, or until the cheese is melted and bubbly.

Serve with buttered rice!
