This spicy Cajun potatoes is as we all know the signature dish of barbecue nation. They pull me everywhere time to their doorstep and my hubby wonders as to how one can love potatoes so much (he isn’t a potato lover, but dats another story 😀). I’ve tried preparing it many times but couldn’t make up to it's right taste but after a lot of trial and error methods this tastes somewhat like the barbecue nation ones. Enjoy! Happy eating!

Ingredients

  1. 2Potatoes boiled
  2. as requiredMayonnaise
  3. as requiredButter
  4. as requiredTomato ketchup
  5. 1-2Chopped onions
  6. as requiredMixed herbs

Cooking Instructions

  1. 1

Boil around 6 to 7 baby potatoes with a teaspoon of salt added to the water in a pressure cooker.
In a nonstick pan add 1 tablespoon of butter and shallow fry the potatoes by pressing them so that they flatten with the skin till the skin turn crispy and golden in colour.

  2. 2

After the desired colour and texture is seen transer them to a plate and keep aside. Chop one onion and keep aside.

  3. 3

Now in a bowl add mayonnaise as per your choice and taste (I have added around half cup of mayo) add paprika powder as per your taste, a tablespoon of tomato ketchup, mixed herbs a pinch full, check the seasonings and add if you need any.

  4. 4

Mix the chopped onions and the potatoes well with the mayonnaise and serve immediately. Drizzle some mayonnaise on top for the rich look.

Note: We have to remember to serve the Cajun potatoes immediately after the dressing is fone else the crispy skin gets soggy.
