Ingredients

  1. 1/2 teaspoonminced fresh garlic
  2. 16– 20 slices pepperoni, coarsely chopped
  3. 1/4 teaspoondried oregano
  4. 1 1/2 cupsmarinara sauce
  5. 2 Tchopped fresh basil
  6. 2 tspolive oil
  7. 1 lbchopped chicken breast
  8. 1/4 tspfreshly ground black pepper
  9. 1 cuppart-skim mozzarella cheese, shredded

Steps

  1. 1

    In a non-stick pan, sauté garlic until it starts to brown, then add pepperoni, oregano, and marinara sauce. Bring to a boil, then reduce heat and simmer for 5 minutes. Remove from heat and stir in fresh basil. Pour into a baking dish.

    Rinse non-stick pan, oil, and sear peppered chicken.

  3. 3

    Put chicken in baking dish, cover with marinara, then add mozzarella. Bake for 20 minutes at 375°.
