  • Basic Ingredients
  • 1Edam cheese ball
  • as neededoil
  • 1 2/3 lbsground pork
  • Ingredients for the Filling
  • 1chopped onion
  • 1 clovegarlic, chopped
  • 4 tbsplard
  • 1chopped bell pepper
  • 1/2 tspground cinnamon
  • salt to taste
  • pepper to taste
  • 1/4 cupvinegar
  • 1.8 ozolives
  • 1.8 ozraisins
  • 3 tbspcapers
  • 14 oztomatoes, concassé
  • 3hard-boiled eggs, chopped
  • Ingredients for the White Sauce (K’óol)
  • 1 quartbroth from cooking the meat
  • 1 bunchcilantro
  • 1.8 ozolives
  • 0.7 ozcapers
  • 3 tbspflour
  • salt to taste
  • as neededoil
  • Ingredients for the Tomato Sauce
  • 1.1 lbstomatoes
  • 1/2onion
  • 1xcatik pepper
  • as neededoil
  • as neededcilantro
  • 2 tspbouillon
  • salt to taste

Steps

    Scrape the inside of the Edam cheese ball to make room for the filling.

    To make the cheese filling:

    Heat the lard, fry the onion, then add the garlic, bell pepper, meat, and all other ingredients.

    Fill the cheese with the mixture, cover it with a cloth or fabric, and steam it until the cheese becomes soft.

    To prepare the white sauce:

    Prepare a chicken broth with bouillon powder, add cilantro, olives, and capers.

  7. 7

    Separately, dissolve the flour in a little water, strain it, and add it to the broth gradually while stirring constantly.

    Add salt and a little oil. Keep on low heat.

    To make the tomato sauce:

    Blend the tomatoes with a little water, the onion, and the pepper. Fry this mixture and add the cilantro.

    Season with bouillon and salt.

    Bring to a slow boil uncovered, stirring until it thickens, about half an hour.

    Plating and serving:

    Serve at the table with both the white and tomato sauces and the cheese previously removed from the ball.

Ahora estoy nuevamente en España tras dos años en Puebla con mi madre, y un año en Mexico DF. Estudié Derecho en la UNAM, pero no lo terminé..Terminé los estudios de turismo España, pero no trabajo. Llevo varios meses en Mis recetas y me ha encantado. Modestamente me gustaría que entre todos los mexicanos promoviéramos un mejor conocimiento de la cocina mexicana en el mundo, especialmente en Europa.
