बैंगन के ऊपर तेल लगाकर भून ले. एक पेन मे तेल गर्म करें, उसमे जीरा और हींग डालकर भूनें.

प्याज़, हरी मिर्च, लहसुन और अदरक डालकर भूनें. भूनने के बाद टमाटर डाले और अच्छी तरह भून लें.अब इसमें हल्दी पाउडर, मिर्च पाउडर, धनिया पाउडर अमचूर पाउडर डालकर चलाए.

अब इसमें भूनें हुए बैंगन के चाकू से टुकड़े करके डाल लें, अच्छी तरह मिलाए, और 5मिनट तक स्लो गैस पर पकने दें.गैस ऑफ कर दें, गरम मसाला डालें, और धनिया पत्ती डालें, सर्व करें, तैयार है बैंगन भरता.
