Mini mushroom and leek quiche

Ingredients

1 hour
6 mini quiches
  1. 1/2a leek
  2. 3big mushrooms
  3. 4 clovesgarlic
  4. 2green onions
  5. 1cottage cheese (125 gr)
  6. 1shredded small piece of hard salted chees (about 15 gr)
  7. 2 spoonsflour
  8. ~50 gr shredded yellow cheese (gauda)
  9. 2eggs

Cooking Instructions

    Choop the leek, fry until golden. Add the garlic, fry for another minute and then add the mushrooms and fry until soft.
    Let cool.

    In a bowl, mix the cottage cheese, yellow and hard salted cheeses and flour.

    Add chopped up green onion.

    After the leek and mushrooms are cold, add then to the mixture.

    Now spice:
    I addded salt, pepper, fresh nutmeg, tomato paprika and a bit of mushroom powder.

    Mince some fresh thyme leaves (2-4 little brances) and add to the mixture.

    TASTE AND FIX BEFORE YOU ADD THE EGGS.

    Add the two eggs, mix well and pour into an oiled silicone mold.

    Bake in a preheated oven of 185°C for 35 minuts for soft quiches.

    Of you want them a bit firm, or if your making one big quiche, bake it longer.
