Flavourful Brocolli Mint Raita

This raita is quite different from regular ones. It’s cooking and prep is very simple. With just few steps we can come up with flavourful raita because brocolli is usually a bland vegetable. Fresh mint adds so much flavour to the dish and acts as a palate cleanser between meals too. It’s very healthy helping in overall health and so including in diet once a week is good. This raita goes well with roti, Biryani etc.

Cut brocolli florets alone into tiny pieces. Boil in water until you’re able to cut it with a fork.

Once boiled drain the water. Add salt to brocolli.

To a bowl add the curd and whisk well until it becomes thick and creamy. Add the boiled brocolli to it and mix well. Brocolli itself will release some water. If not adjust consistency with water.

Temper the mustard seeds, hing and red chilli in oil until it sputters.

Add this tempering to the brocolli raita. Mix thoroughly. Garnish with mint leaves or mix with this.

Serve chilled raita with hot biryani or rotis.
