Rinse ugu leaves well, slice into small sizes. Set aside

Wash onion and tomatoes. Slice and set aside.

Remove plantain back, slice and set aside.

In a frying pan, pour oil on medium heat. Fry plantain to golden brown.

Drain oil into a bowl and leave little sufficient for frying.

Pour in the sliced tomatoes and onion. Keep stirring for 2 minutes.

Add ugu leaves and stir for 30 seconds. Sprinkle salt.
- 8
Finally, break in the eggs.
