Quick and sweet. This is a colourful salad that takes very little time to prepare.
Carrot, currant and coconut salad
Quick and sweet. This is a colourful salad that takes very little time to prepare.
Steps

Put the currants in a bowl and add the lemon juice. Let soak for at least 30 mins so the currants plump up and the juice starts to change colour.

Peel and then julienne the carrots on a mandolin. (You can grate the carrot but the end result is not as pretty)
- 3
Mix the carrot through the currants.
- 4
Sprinkle the coconut on the top and serve.
