Ingredients

30-40 mins

  1. For the Pulao:-
  2. 1 cupbasmati rice soaked for 10 mins
  3. 1/2 cupcarrots chopped
  4. 1/2 cupgreen beans chopped
  5. 1/2 cuppotatoes chopped
  6. 5green chillies split vertically
  7. 1 tspginger garlic paste
  8. 1/2 cuponions chopped
  9. handfulCoriander chopped
  10. 1/2 tspturmeric powder
  11. 1 cupgrated coconut
  12. as requiredWater
  13. as requiredOil
  14. 1bay leaf
  15. 3cinnamon sticks
  16. 4cloves
  17. 3cardamoms
  18. 2star anise
  19. to tasteSalt
  20. Soya fry
  21. 1 cupsoya chunks soaked for 30 mins
  22. 1/2 cuptomato purée
  23. 2green chillies paste
  24. 1/3 cuponions chopped fine
  25. 1 tspmustard seeds
  26. 1/2 tspginger garlic paste
  27. 1/4 tspgaram masala
  28. 1 tspred chilli powder
  29. 1/2 tspcoriander powder
  30. 1 tspCoriander to garnish
  31. as requiredOil
  32. as requiredWater
  33. to tasteSalt
  34. as requiredPepper

Steps

30-40 mins
  1. 1

    For the Pulao first. In a cooker, pour some oil and fry the bay leaf, cinnamon stick, star anise, cardamoms and cloves till it sputters.

  2. 2

    Next add the ginger garlic paste and green chillies. Fry till it releases aroma.

  3. 3

    Add the onions and fry till it becomes translucent. Cover and cook for 2 mins on medium high flame until all the contents become mushy.

  4. 4

    Now add the carrots, beans and potatoes. Add all the spice powders as in ingredients. Cover and cook on low to medium flame till the veggies are half cooked. Don’t mash them too much.

  5. 5

    Add the pre soaked basmati rice to cooker. Add 1/2 cup water. Cover and cook for 2 whistles or until rice is al dente and not too mashed.

  6. 6

    In a bowl of water boil the grated coconut till it turns milky and aromat. Remove from flame and drain In a container. Pour this freshly made coconut milk with the rice in the cooker. Mix gently without breaking rice.

  7. 7

    You can garnish with coriander leaves and fried onions (optional).

    Next to make the soya fry. In a pan with oil, add mustard seeds fry till they pop.

  9. 9

    Add ginger garlic paste and red chilli paste and fry till aromat. Then add the onions and fry till it browns.

  10. 10

    Then add the tomato purée along with the other spice powders. Add a little water. Cover lid and cook till soya becomes soft and raw smell of chilli powder leaves.

  11. 11

    Garnish with coriander. Serve hot coconut milk Pulao with soya fry, onion raita and chakli or pappad.
