Chocolate Peanut Butter Stuffed Dates
The perfect healthy treat!
Satisfy that sweet tooth and you can feel good about it.
Cooking Instructions
- 1
Slice the dates open lengthwise, careful not to slice all the way through. Remove the pit.
- 2
Add an hazelnut in each date.
- 3
Mix the peanut butter (or any preferred nut butter) in a small bowl until smooth.
- 4
Add a teaspoon of peanut butter in each date. Pop into the freezer to firm up.
- 5
Meanwhile, over a double boiler melt the chocolate until smooth. I add a tablespoon of milk / coconut butter to help smooth it quicker.
- 6
Dip the dates into the chocolate one at a time. Use a fork to scoop them out of the chocolate and place on a drying rack.
- 7
Sprinkle with toppings of your choice or drizzle with additional melted chocolate.
- 8
For the last dates I added chopped hazelnuts in the melted chocolate before dipping the dates.
- 9
Place them back in the freezer for 15 minutes to allow the chocolate to harden.
- 10
Store in an airtight container in either the refrigerator or freezer and enjoy!
