Step 1 – heat a pot a water to boil the pasta

Step 2 – Dice the spicy Italian beef sausages

Step 3 – Making the Miso Carbonara sauce
We will need 1 egg yolk and 3 whole eggs. Add them together. Grate parmesan cheese on the eggs (1 cup). Add ½ tsp pepper. Mix them well with a whisk. We will need a smooth sauce so a lot of whisking. It took me about 5 minutes to get a smooth sauce. - 4
Step 4 – Cooking the sausage
Heat a pan on med heat. Add the sausages. It has some fat in it so no need to add any oil at the beginning. I wanted a rich flavor so added a knob of butter later. Then add 2 tsp minced garlic and 2 tbsp scallion (bottom part only). Cook for few mins. By now we should be able to add pasta to the boiling water. Leave the heat on med and lets go the pasta pot. - 5
Step 5 – Cooking the pasta
Add 2 tsp salt to the boiling water and add the pasta. I like mine al dente so cooked it for 8-10 minutes. - 6
Step 6 – Add pasta to the pan directly from the pot
Add the pasta to the pan directly from the pot and mix well. - 7
Step 7 – Adding Miso Carbonara sauce to the pan
Add the miso carbonara sauce to the pan and cook for 5-7 mins while mixing the pasta and sauce frequently. I needed to add some pasta water to keep it creamy. - 8
Step 8 – Garnish
Sprinkle some smoked paprika. It will add a nice kick. Grate some fresh parmesan on top. Add scallions. Lastly add some furikake. It’s a Japanese rice condiment. It adds great umami to the overall flavor. Enjoy!!
