Cara Membuat

🟨Siapkan bahan dan cuci bersih

🔸Ulek Cabai merah besar, cabai rawit, terasi, bawang putih dan kencur.
🔸❗❗(Tidak perlu sampai halus).
🔸Masukkan garam, gula, dan penyedap,
🔸Ulek kembali hingga sedikit lebih halus.

🟥Grind together red chilies, bird’s eye chilies, shrimp paste, garlic and aromatic ginger.
🔸❗❗Do not grind too smooth (keep it slightly coarse).
🔸Add salt, sugar, and seasoning,
🔸Then grind again until slightly smoother (not becoming paste) - 3
🟨Iris tomat, bawang merah, kacang panjang (kecil-kecil), dan terong (tipis / dadu).
🔸Masukkan semua irisan ke cobek, lalu campur hingga tercampur rata.
🔸❗❗(Sedikit ditekan-tekan juga waktu nyampurnya).
🔸Karena ulekan gak cukup, saya pindah wadah.

🟥Slice tomatoes, shallots, long beans (small pieces), and eggplant (thin slices or small cubes).
🔸Add all sliced ingredients into the mortar.
🔸❗❗Mix well while gently pressing.
🔸Because my mortar wasn't big enough, I moved to the container. - 4
🟨Masukkan perasan jeruk dengan bantuan saringan (agar biji tidak masuk).
🔸Lalu aduk hingga tercampur rata.
🔸Masukkan minyak goreng panas, dan aduk lagi.
🔸❗❗#NB : Panaskan minyak sebelum dimasukkan.

🟥Add lime juice (using help of strainer to remove seeds),
🔸Then mix well.
🔸Pour in hot oil, mix again until combined.

Tips
🟨Jangan terlalu banyak diaduk agar teksturnya tetap segar dan renyah.
🔸Sesuaikan jumlah cabai sesuai selera pedas Anda.
🔸Paling enak disajikan selagi hangat.
