Instant Haladipatra Pitha (pitha with turmeric leaf)

This is a authentic and traditional recipe from Odisha. This pitha is also known as Enduri Pitha . This pitha (cake) is made in a winter festival and pooja called "Prathamastami". In this day we worship the first child of the family as the incarnation of Goddess Maa Lakshmi. This type of pitha is prepared in every household in Odisha and offered to Maa Lakshmi and the first child.

Usually , for this Pitha, Urad dal and Rice soaked , being ground and fermented over night. A stuffing with grated coconut , jaggery , Chena ,dry fruits and ilachi powder is prepared by cooking in ghee. On turmeric leaf the batter is taken , stuffed with the coconut stuffing and steam cooked.
The beautiful aroma of turmeric leaf is the main attractive point.

I have powder of Urad dal and Rice with me all time. My kitchen garden has turmeric plants , so I tried this recipe with the help of Eno fruit salt to get instant , delicious and mouth melting Pithas.

Ingredients

2-3 servings
  1. 1 cupUrad dal and Rice powder
  2. as required Water to make batter
  3. 1 pinchsalt
  4. 1/2 packetEno fruit salt
  5. For stuffing:
  6. 2 tbspcoconut powder
  7. 2 tbspbrown sugar
  8. 2 tspchopped almond
  9. 2 tspchopped pistachios
  10. 1 tbspmilk powder
  11. 2 tspmilk
  12. 1/2 tspilachi powder

Steps

    Clean, wash and dry the turmeric leaves.
    Add water to the dal + rice powder with salt and make a thick batter.

    Mix all ingredients of stuffing and keep aside.

    Heat water in steamer.

    Mix well 1/2 packet of eno powder to the batter

    In each turmeric leaf take some batter at the center. Keep some stuffing. Press both remaining side of leaves one on other and attach with a toothpick.

    Steam then in steamer for 10 minutes.

    Delicious Haladipatra Pitha is ready to serve.
