Stir Fried Coccinea

Stir frying is fast& fresh way to cook . Simply toss & turn bite sized pieces of food in hot oil, over high heat & in few minutes cooking is done. Vegetables or any other food which are stir fried ,merge crispy. Here I have made stir fried coccinea aka Ivy Gourd / Tendli / Tindora/ Tumse. Coccinea contains Iron, vitamin B2 & B1. It also contains dietary fiber & calcium in little amounts. If we see it's health benefits -- it prevents kidney stones, protects nervous system, maintain metabolism & fibres in it keeps the digestive tract healthy.
This stir fried vegetable called 'sambhara' in Gujarati. It is side dish/ fresh pickle which is made in majority bones with different vegetables.

Trim both edges/ sides of coccinea and cut into thin slices.

Heat oil, add mustard seeds, once they splutter add turmeric powder & all vegetables. Stir for a couple of minutes on high flame. Add salt, cook for a few seconds on a high flame. Turn of the heat.

Transfer it in serving bowl, sprinkle asafoetida and dry coriander powder. Serve along with meals. Can add green chillies,if you like little spicy.
