This is my mother's recipe for the famous 'carne en su jugo' from Guadalajara, Jalisco. It's her own version.

Fry the bacon until crispy, then set aside.

Fry the beef in the bacon fat.

Blend the tomatillos, onion, garlic, and one bunch of cilantro, then bring the mixture to a boil in a large pot.

Chop the remaining onion and the other bunch of cilantro.

Add the beef to the tomatillo and cilantro sauce. Season with 2 tablespoons chicken bouillon powder, a pinch of pepper, a few drops of Worcestershire sauce, and salt to taste.

To serve, place a spoonful of beans in a bowl, add the beef with its broth, and top with chopped onion and cilantro.
