Soak the beef overnight. The next day, rinse the meat and bring water to a boil in a pressure cooker with the beef, bones, whole onion, head of garlic, chickpeas, and cilantro.

Once it comes to a boil, skim off any foam, cover, and cook for 20 minutes.

When the meat is tender, remove it from the broth. Add the chayotes, cut corn, carrots, and potatoes. Cover, cook for 5 minutes, then turn off the heat.

Combine the meat and vegetables, bring to a boil, and add the cabbage, zucchini, salt, and mint.
