Ingredients

  1. 1brinjal
  2. 1potato
  3. 1onion chopped
  4. 2-3 clovesgarlic
  5. 1tomato
  6. 1/4 tspCumin seeds
  7. 1green chilli chopped
  8. 1 tbspMustard oil
  9. 1 pinchhing
  10. 1/4 tspamchoor powder

Cooking Instructions

    Peel the skin of brinjal if it’s hard and cut in cubes. Peeling skin is optional

  2. 2

    Take oil in a wok and let it heat up. add whole cumin and hing.

  3. 3

    Add chopped garlic and ginger. Sauté for a minute

  4. 4

    Add chopped onions and sauté till pink

  5. 5

    Add the dry masalas and stir to avoid burning. Add chopped tomato and green chilli.

  6. 6

    Sauté till tomato turn slightly soft and then add cubes of potato and brinjal. Stir nicely and then cover the wok with a lid. Let it cool on low flame till it’s done.

  7. 7

    Sprinkle amchoor powder and mix well. Enjoy hot aloo baingan sabzi with roti or parantha
