Ingredients

4 people
  • 3medium sized beetroots
  • 1medium sized potato
  • Halfonion
  • 1 TBSolive oil
  • Water
  • 1 cubesoup stock
  • Pinchblack pepper and salt
  • 1-2 cupsmilk or soy milk
  • Pinchparsley for garnish

Steps

  1. 1

    Peel and cut into small pieces beetroots, onion and potato.

  2. 2

    Heat olive oil in a small pot and fry your onion, potato and beetroots. Add enough water to cover them and cook for 15-20mins until beetroots become soft.

    Process them well with hand blender or in a mixer.

    Add milk or soy milk, soup stock and pinch of salt and pepper and let it hot (don’t boil!).
