I bought lots of beetroots and was exploring new recipes!
Cooking Instructions
- 1
Peel and cut into small pieces beetroots, onion and potato.

Heat olive oil in a small pot and fry your onion, potato and beetroots. Add enough water to cover them and cook for 15-20mins until beetroots become soft.

Process them well with hand blender or in a mixer.
- 4
Add milk or soy milk, soup stock and pinch of salt and pepper and let it hot (don’t boil!).
