Use low calorie cooking spray to fry and not only is this dish low-carb, it's also low-fat. The chinese five spice, coupled with the chillies, really brings out the flavour of the beef. A healthy, delicious and filling meal.

Use low calorie cooking spray to fry and not only is this dish low-carb, it's also low-fat. The chinese five spice, coupled with the chillies, really brings out the flavour of the beef. A healthy, delicious and filling meal.

Ingredients

  1. Lean beef mince
  2. Adzuki beans
  3. Dried birds eye chillies
  4. Hot chilli powder
  5. Chesnut mushrooms
  6. Parsnip
  7. Potato
  8. Baby tomatoes tomato puree
  9. Chinese five spice
  10. cubeBeef stock
  11. Onion
  12. Garlic
  13. leafBay
  14. Peppercorns

Cooking Instructions

    Oven at gas mark 6

    Brown off the mince and add some Chinese five spice and chilli powder. Put in the oven pot.

    Fry off the finely chopped onion, garlic and all other veg until onion is starting to soften. Add to pot.

    Add peppercorns, bay leaf, tomatoes, puree, chillies and beef cube to the pot.

    Add the beans and their water, then top up the pot with boiling water to just over 3/4 of the way up.

    Cook with lid on for 3 hours then 30 mins with lid off. Season well.

  7. 7

    Leave over night for the flavours to enhance, then serve on a bed of spinach.
