Ingredients

  1. 650 gmCarrot
  2. 4 cupsfull fat milk
  3. 4 tbspghee
  4. 150 gmsugar
  5. 10-12chopped cashew
  6. 1 tspcardamom powder
  7. 10-12sliced almond
  8. 1 pinchsaffron

Cooking Instructions

    First rinse, peel and then grate the carrots. In a kadhai or deep thick bottomed pan combine milk and grated carrots.

    On a low to medium flame, bring the whole mixture to a boil and then simmer. Keep on stirring in between.

    When the milk has 70% reduced, add the ghee, sugar and powdered cardamom to the mixture and mix.

    Towards the end, add the cashews, almonds and saffron. Simmer the mixture till all the milk is evaporated. Switch off the burner.

    Serve Gajar Halwa with garnish of some chopped dry fruits.
