Gajar halwa is one of the most popular dessert 9f winter season. We usually make carrot halwa by grated the carrot and it took more time. This time I used some shortcut method to save thr time. I made this halwa in pressure cooker and there is no need of grated the carrot.

Gajar halwa is one of the most popular dessert 9f winter season. We usually make carrot halwa by grated the carrot and it took more time. This time I used some shortcut method to save thr time. I made this halwa in pressure cooker and there is no need of grated the carrot.
Steps

Peel and wash the carrot. Then cut into roughly pieces.place the chopped carrot in a pressure cooker add 1/2cup water and pressure cook for 3 whistle. Turn off the flame. Open the lid.

If there is water in it cooked on high flame for few minutes to reduce the excess water. Then mashed the cooked carrot well with a masher.

Now add the ghee and cooked for 8-10 minutes on medium to high flame. keep stirring to avoid sticking.

When the carrot mixture combined well add milk and cook on low to medium flame until the milk has reduced. Keep stirring. Then add sugar and cooked again for 4-5 minutes.

When the sugar has melted, Add the khoya mix and cooked for 4-5 minutes on high flame and when the mixture started to leave the bottom and the ghee has released, add chopped dry fruits, mix and cook for 2-3 minutes then switch off the flame.

Dish out. Garnished with some more dry fruits and enjoy the yummy gajar halwa.
