Homemade egg tarts are always the most reassuring. Making your own tart crust from scratch is especially satisfying. It’s not difficult, but it does take time and effort. However, once you taste how delicious they are, you’ll forget all about the little steps involved.

Start by making the tart crust. Brush one sheet of puff pastry with oil, then stack another sheet on top and roll it up. Brush with more oil, stack another sheet, and keep rolling until you have a log.

Wrap the log in parchment paper. Freeze for 20 minutes, then remove and cut into slices about 2 inches (5 cm) thick.

Roll each slice flat with a rolling pin. Don’t make them too thick—just enough to fit your tart molds. Press the dough into the molds and poke holes in the bottom with a fork to help them bake evenly.

Make the filling. Beat the eggs, then add the sugar. Add all the remaining ingredients (except the avocado slices) to a pot and mix well.

Stir until the sugar is completely dissolved. Strain the mixture. (Optional: You can also melt some chocolate and mix it into the filling, and add a few raisins if you like.)

Air fry at 400°F (200°C) for 15 minutes.

When the egg tarts are done, carefully remove them (they’ll be hot). Arrange the avocado slices on top of the tarts. Enjoy!
