Rinse the pork chops in diluted salt water, then rinse several times under running water. Drain well in a colander. Use a meat mallet to gently pound the pork to tenderize. Marinate the pork chops with all the ingredients listed above for at least 1 hour, or overnight for best flavor. Grate the garlic and shallot. Wash and drain the vegetables for serving. For the dipping sauce, mix fish sauce, sugar, and water in a 1:2:2 ratio. Combine in a saucepan and bring to a boil, then let cool. When ready to serve, add fresh lemon juice and minced garlic and chili to the sauce. The garlic and chili will float and look beautiful.

Place the marinated pork chops on a grill rack. I use a convection oven, grilling at 400°F (200°C) for 15 minutes. Open the oven, brush the remaining marinade over the pork, flip, and grill the other side for another 10 minutes. Done.

Pack cooked broken rice into a small bowl, then invert onto a plate. Serve with pickled vegetables, lettuce, and tomato. Drizzle with scallion oil and serve with a bowl of dipping sauce. Enjoy!
