Churro-Shaped Cookies for My Son-in-Law 😉

This is a fun recipe for cookies shaped like churros. The idea came about because I’ve been making cookies since my grandson Tiago’s birthday ♥️, and everyone in the family tried them except my son-in-law Jose. There was always a reason he couldn’t eat one (they were underbaked, being decorated, or the icing was drying). One day, I decided to make new cookies for Halloween and was telling my daughter on the phone about the shapes I’d make (witch hats, skulls, etc.). He overheard and told my daughter he wanted to try the cookies, even if they were shaped like churros, haha! My daughter told me, and that’s how these came to be! This morning, I sent him a photo of his fun cookies... he was happy and enjoyed them today, Sunday, our family day.
They have different flavors because I made them with leftover dough from Halloween Witch Hat Cookies, Halloween Bat Cookies, and Mexican-style cookies. The first have a coffee flavor, the second are chocolate, and the last are almond. All three are made the same way, just with different flavors. Here’s the basic recipe. To shape the cookies like churros, I used a cookie press with a special attachment (see photos).
The mate cup with pearls in the photo was decorated by my sister Piruchi. She brought it as a gift on her last visit 🤗

In a bowl, beat the butter and powdered sugar until the mixture is light and creamy. Add the egg and vanilla extract, and mix well.

Gradually add the flour and mix until you have a soft dough (do not knead). For almond or chocolate flavor, replace half the flour with ground almonds or cocoa powder.

Place some dough into a cookie press fitted with a churro-shaped disc. Press out the dough onto a baking sheet lined with parchment paper. Refill the press as needed until all the dough is used.

Chill the cookies in the refrigerator for at least two hours.

Bake in a preheated oven at 350°F (180°C) for 10 to 12 minutes. Remove from the oven when lightly golden, let cool, and dust with powdered sugar.
