Peel and cut the potatoes and carrots, then cook them in plenty of water until tender.

Remove the seeds from the chiles and boil them with half of the onion, the tomatoes, and the garlic. Once cooked, blend them with the oregano, cumin, and salt, then strain the mixture well.

Fry the carrots and potatoes in lard along with the other half of the onion, sliced into thin strips, and about 3 tablespoons of the strained chile sauce.

Heat the tortillas on a griddle with lard. Then dip them in the chile sauce.

Fill each tortilla with the shredded cheese mixture and a little chopped onion. Roll them up.
