Ingredients

  1. 1 cupwheat flour
  2. 1 cupbrown caster sugar
  3. 2 tspbaking powder
  4. 1+1/2 tsp cinnamon powder
  5. 2eggs
  6. 1/2 cupolive oil/ vegetable oil
  7. 2medium sized green apples
  8. 1 tbspbrown sugar
  9. 1/2 tspvanilla essence

Cooking Instructions

    Preheat the oven at 180 degrees.

    Prepare 8" loaf pan by greasing with oil, place a piece of parchment paper at the base of the pan.

    Mix all dry ingredients- flour, powdered brown sugar, baking powder, 1 tsp cinnamon powder and salt in a bowl.

    Add vanilla essence, oil, eggs and mix lightly using a hand whisker, make a lump-free batter.

    Add chopped green apple, mix it using a spatula, do not over mix.

  6. 6

    If you feel the batter is too thick, which is fine, you can add 1 tbsp water and mix it well.

    Add the batter in the prepared loaf pan.

    Mix remaining half tsp cinnamon with brown sugar. Sprinkle it evenly over the cake. You can increase the cinnamon quantity if you like.

    Bake it in a preheated oven at 180 degrees for 60 minutes.

    You need to check the cake after 50 minutes of baking for the doneness.

    If you feel top layer has turned brown enough, cover the cake lightly with a piece of aluminum foil, continue baking for another 10 minutes.

    Once done let it rest in the pan for 15 minutes and then on a cooling rack until it has cool down completely.

    You can slice them and store in an airtight container. When kept in the fridge it tastes even better. The cake will remain soft and moist over a week.

    Have it as it is or along with some fruits or ice-cream with a drizzle of honey, caramel sauce. I love it just as it is!
