Kata-kat or tak-a-tak (Urdu: کٹاکٹ) is a special meat dish popular throughout Pakistan. It is a dish originating from Karachi, Pakistan made from offal (i.e., a mixture of various meat organs), including testicles, brain, kidney, heart, liver, lungs and lamb chops in butter. The dish's name is an onomatopoeia from the sound of the two sharp blades that heat the griddle as they cut up the meat. It is still an open question whether the correct name is kata-kat or tak-a-tak.

Bcz we r home chef and we don’t have commercially sharp blades spoon, so we cut organs in tiny pieces before cooking and then cook on tawa.

Ingredients

40-45 minutes
4-6 ppl
  1. 4goat kidney (tiny pc)
  2. 2goat heart (tiny pc)
  3. 1goat brain
  4. 250 gmboiled meat (tiny pc)
  5. 100 gmliver (tiny pc)
  6. 3-4tomatoes (finely chopped)
  7. 1Onion (large)(finely chopped)
  8. 2 tbspginger garlic paste
  9. 1/2 cupyogurt
  10. 1 tbspwhite cumin (zeera)
  11. 1 tbspcrushed red chilli flakes
  12. 1 tbspwhole coriander seeds
  13. 1 tspred chilli powder
  14. 1 tspdaighi mirch powder
  15. 1 tspgrounded cumin
  16. 1 tspcoriander powder
  17. 1 tspturmeric powder
  18. 1 tspchat masala
  19. 1 tspgaram masala
  20. To taste Salt
  21. 7-8green chilli
  22. 2 tbsplemon juice
  23. Fresh Mint & coriander leaves for garnishing
  24. 1/2 cupOil or Butter

Steps

40-45 minutes
  1. 1

    Firstly I showed u the utensil called tawa or a flat pan, which u use in today’s cooking

    Firstly wash and cut meat in small pc then boil it, set aside
    Boil brain with lil turmeric powder, remove it's veins, cut in small pc, set aside

    In a pot boil heart n kidney for couple of minutes with 4 -5 whole garlic cloves and 1 tbsp vinegar, discard it's water, set aside (this step is important to discard the smell of organs)

    Heat oil then add kidney and heart with a splash of water and cover the lid cook for 5-7 minutes, (pc should b tiny)

    Add liver with tomatoes, onions & ginger garlic paste, mix it well.

    Again cover and cook for 5-7 minutes

    Finely add all seasoning with yogurt & green chilli, start bhunofy until oil separates
    Add meat & brain, mix it well

    Lastly add lemon juice
    Garnish with fresh mint & coriander leaves
    Serve hot with Raita & Nan
