Ingredients

  1. Small size Tamarind (Lemon size)
  2. 2 cupsHot water
  3. 2 tbspManathakkali vathal
  4. 1Tomato chopped finely
  5. 1/2 tspRed chilli powder
  6. 2 tbspVathakuzhambu powder
  7. 1 tspGrated Ginger
  8. 1/2 tspJaggery for taste
  9. 1/2 tspGhee
  10. As neededSalt
  11. Vathakuzhambu Powder:
  12. 1 cupCoriander seeds
  13. 20Red chilli
  14. 1/2 cupToovar dal
  15. 1/4 cupBengal gram
  16. 3 tbspBlack pepper
  17. 1 tbspJeera
  18. 1 tbspFenugreek seeds
  19. 1 tspTurmeric powder
  20. 2 tbspCurry leaves
  21. To Temper:
  22. 2 tbspGingelly oi
  23. 1 tspMustard seeds
  24. 1/2 tspFenugreek seeds
  25. 2no Red chilies
  26. 5Garlic chopped
  27. 1 tbspChanna dal
  28. 2 tspPeanuts
  29. 1 tspUrad dal
  30. pinchHing
  31. leavesFew Curry

Steps

  1. 1

    Soak tamarind in hot water for 20 minutes. squeeze the pulp and keep aside.

  2. 2

    Dry roast all the ingredients under the topic "Vatha Kuzhambu Powder". Cool down and grind to powder. Store this in airtight container and you can use upto 2 months.

  3. 3

    In iron kadai or you can use anyother. But iron kadai taste much good. Heat gingelly oil once hot add mustard seeds. Once mustard done crackling add fenugreek seeds, red chilli, channa dal, peanuts, urad dal, hing and curry leaves. Cook until all dals turns golden brown.

    Add manathakkali vathal and roast for couple of minutes in low flame. Now add vathakuzhambu powder, turmeric powder, chilli powder, grated ginger and chopped tomato. Saute for 5 minutes in low flame.

  5. 5

    Now add tamarind water and salt. Cover and cook in medium heat for 10 to 15 minutes until oil separates from the gravy. Stir occasionally.

  6. 6

    Now add jaggery and cook for another 2 minutes. Add ghee and adjust the salt.

  7. 7

    Switch off the flame and serve hot with rice, papad..
