Ingredients

  • Onions, big dice
  • Leeks, green part
  • kombu, sea kelp
  • Celery, big dice
  • Carrots, baby
  • Mushroom, mixed
  • Yellow Squash, big dice
  • Zuchenni, big dice
  • Apples, Granny and Honeycrisp
  • Coconut Oil
  • Nutritional Yeast
  • Water
  • Bouquet Garni

Steps

  1. 1

    Cut and mix all vegetables, except kombu. Place half on a baking sheet and bake, at 425° for 10 mins, or until browned.

  2. 2

    Add all vegetables together in a Stock Pot. Add Water, kombu, coconut oil, nutritional yeast and bouquet garni.

  3. 3

    Bring to a boil, then lower heat, cover and simmer for 1-2 hours.
