In a large saucepan heat olive oil then cook chicken through, seasoned with salt and pepper

Remove chicken. Add onion, peppers and garlic cook till softened

Pour in chicken broth, black beans, lime juice, chopped tomatoes and rice.

Reduce heat to medium, place lid on saucepan and simmer for 10-15 minutes (until rice is tender)

Add chicken and cilantro to pan and stir to combine
