Wash and dice the bell peppers, onion, and garlic into small pieces. Sauté them in a skillet with a drizzle of olive oil, a pinch of salt, and pepper.

When the vegetables have softened, add the chicken and stir well. Add another pinch of salt and cumin to taste. Cook, stirring, until the chicken is cooked through. Set aside.

Wash the tomato and dice it into small pieces. Add the tomato to the mashed avocado, pour in the lime juice, and add a pinch of salt. Mix well and set aside.

Heat a crepe pan or nonstick skillet. Warm a flour tortilla on one side, then flip it. Add cheese, chicken, and avocado mixture. Top with another tortilla and carefully flip to cook the other side. Remove from the pan. Repeat the process until all ingredients are used.
