Ingredients

45minutes
12 servings
  • 400 gmixed beans in brine
  • 410 gbaked beans in tomato sauce
  • 410 gbutter beans in brine
  • 300 gbaby marrows, thinly sliced
  • 3mixed peppers, chopped
  • 2garlic cloves, chopped
  • 2spring onions, chopped
  • 1 cupWellington sweet & sour sauce
  • 1 tspSeven Colours grill spice
  • 2 tbscooking oil

Steps

45minutes
  1. 1

    Drain the beans in brine and set aside.

  2. 2

    Heat oil in a shallow pan over medium heat.

  3. 3

    Saute peppers and spring onion until translucent then add baby marrows, spice and garlic.

  4. 4

    Fry until the baby marrows are soft, this will take about ten minutes.

  5. 5

    Remove from heat and allow to cool

  6. 6

    Mix the cooled vegetables with beans, toss well and dress with the sweet & sour sauce.

  7. 7

    Chill the salad in the fridge for an hour before serving.

  8. 8
