It can be used as a cooking base for many dishes such as chicken, meat and vegetables for a kick of flavour. Chilli oil can also be used a dipping sauce for dumplings, bao buns, steamed buns etc. You can also drizzle it over pastas or noodles for that extra hint of spice. Ingredients

  • 600 mlOil
  • 4 clovesgarlic with skin
  • 2 tbspcoriander seeds
  • 3 tbspwhole black pepper
  • 4black cardamom
  • 1 1/2 tspsalt
  • 2 tbspwhite vinegar
  • 1 cupchilli flakes

Steps

    Take a heat proof bowl, add in chilli flakes, salt & vinegar. Mix well and set aside.

  2. 2

    In a pot, add rest of the ingredients along with oil and cook on the lowest flame for an hour while continuously stirring it and making sure nothing burns. When the garlic changes colour to brown, then turn off the flame and let it rest for 5 minutes or so until the flaming hot temperature drops a little.

    Strain the oil in a separate bowl, be careful as it will be very hot. Do not burn yourself.

  4. 4

    Now slowly gradually add in the oil to the chilli flakes mix. Combine well an let it infuse and cool down before storing in an air tight container.

  5. 5

    Devour with any Chinese food you like or however you prefer.
