Ingredients

  • 1 cupBasmati Rice (long grained rice
  • 1medium Onion, finely chopped
  • 1small Tomato, chop
  • 1/4 cupGreen Peas
  • 3 tablespoonsfinely chopped French Beans
  • 1/4 cupfinely chopped Carrot
  • 1 cupchicken
  • 1small piece of Bay Leaf
  • 1-inch piece of Cinnamon
  • 2Cloves
  • 1/4 teaspoonGaram Masala Powder 1/8 teaspoon Turmeric Powder
  • 1/2 teaspoonRed Chilli Powder
  • 2 tablespoonsfinely chopped Coriander Leaves
  • 2 tablespoonsOil
  • 1 teaspoonGhee
  • 1 cupWater
  • to tasteSalt
  • 1 teaspoonginger garlic paste
  • Pinchyellow food colour

Steps

  1. 1

    Wash rice and soak it in water for 15-20 minutes. Drain and keep aside until needed.

  2. 2

    Heat ghee and oil together in a pan on low flame.

  3. 3

    Add bay leaf, cinnamon, clove, and sauté for 30 seconds.

  4. 4

    Add onion and sauté until it turns light brown or for approx. 2 minutes.

  5. 5

    Cut chicken in cube and fry with onion

  6. 6

    Add ginger garlic paste and mix well

  7. 7

    Add chopped tomato, green peas, french beans and carrot.

  8. 8

    Stir-fry them for approx. 2 minutes.

  9. 9

    Add spices, garam masala powder, turmeric powder, red chilli powder and salt.mix well

  10. 10

    Add rice. Stir-fry them for approx. 2 minutes.

  11. 11

    Add 2 cup water and mix well

  12. 12

    Cover the pan and let cook on low for 15 minutes

  13. 13

    After 15 minutes – switch the heat off and let the rice rest for 10 minutes.

    Colour full rice ready

    When ready to serve – fluff the rice with a fork.

    Garnish with more fresh coriander leaves
