Farfalle with Romanesco Broccoli and Black Olive Pesto

Blend the tofu with the black olives and a pinch of salt until smooth.

Wash and cut the Romanesco broccoli into florets. Place them in a large pot of water with a little kosher salt and bring to a boil.

When the broccoli is halfway cooked, add the pasta and cook until done. Drain, then transfer everything to the pot with the pesto. Toss to combine and serve.
