Steps

First, wash the bitter gourd and remove it's skin. If it's long you may cut it into two.

Now add salt to the gourd such that it costs it well. Keep it aside for an hour.

After an hour, you would find the gourd would have turned tender. Squeeze water. And gently remove the core with a spoon or a scooper.

Now, in a pressure cooker, add these gourds and water. Cook it for 1-2 whistle.

Meanwhile prepare the stuffing. Dry roast gram flour (besan).

Once cooled, add turmeric powder, chilli powder, dhaniya-jeera powder, garam masala, salt, sugar,amchur powder, oil and fresh coriander. Mix and keep aside.

When the pressure settles down drain the pieces of gourd, gentle dry it and fill it up with the besan spice mix.

Heat oil in a pan/kadai, add jeera, asofatida, and gradually put all the pieces of gourd, making sure it doesn't break.

Cook it on medium flame to make the outer crust a lil bil crispy. Rotate the pieces gently.

Add spices and give a mix. Cover and turn the flame off.
