Ingredients

  1. 6 poundsboneless prime rib
  2. 2 sticksbutter softened
  3. 8 clovesgarlic minced
  4. Rosemary
  5. 2 teaspoonssalt
  6. 2teaspoons
  7. Splashlime juice
  8. Splashlemon juice
  9. 1/4 cupDijon mustard
  10. 1/4 cupyellow mustard
  11. 2 tablespoonssweet Rub o’mine

Steps

  1. 1

    Preheat smoker to 225

  2. 2

    Mix all ingredients in a bowl

    Trim excess fat off of prime rib leaving a thin layer

  4. 4

    Lather prime rib in mixture

  5. 5

    Smoke for 35 minutes per pound (meat should be at 130 for medium rare)

  6. 6

    Remove from smoker and let sit until smoker is preheated to 400.

  7. 7

    Place prime rib back on smoker and cook until meat is 140 degrees

  8. 8

    Remove meat and let sit 15 minutes prior to cutting
