This dish has been trending online lately, so I gave it a try and it turned out great.

Soak the dried wood ear mushrooms in hot water for 15 minutes until they expand, then dice them. Dice the white onion as well. Marinate the ground pork with a little salt and pepper for 30 minutes.

Heat a pan over medium heat, add a little cooking oil, and sauté the diced onion until slightly golden. Add the ground pork and cook, then add the mushrooms and stir-fry together.

Soak the rice paper in water with 1 teaspoon of oil in a deep pot for 20-30 minutes. After soaking, lightly oil a cutting board and start rolling the bánh cuốn. Once rolled, brush a thin layer of oil on the rolls and microwave for 2 minutes.

For the dipping sauce: Mix 2 tablespoons sugar, 2 tablespoons fish sauce, 10 tablespoons water, 1 tablespoon lime juice, minced garlic, and minced chili. Arrange the bánh cuốn on a plate, sprinkle with crispy fried shallots, and enjoy.
