Chicken picada

I've tried a few different recipes for carne picada, however they all needed a bit more flavor. I wanted to try to make my own version, but when I got to the store they were out of ground beef, so I thought I would try with ground chicken & it was yummy.

I've tried a few different recipes for carne picada, however they all needed a bit more flavor. I wanted to try to make my own version, but when I got to the store they were out of ground beef, so I thought I would try with ground chicken & it was yummy.
Cooking Instructions

Drizzle pan with olive oil on medium heat. Add ground chicken & season with salt, minced garlic, garlic powder & garlic & herb seasoning. Cook for 8 minutes, stirring occasionally. While meat is cooking, chop potatoes & vegetables.

After 8 minutes, drain meat in strainer or collander & wipe pan of oil. Add chicken & chopped vegetables to pan.

Add salt, pepper, and seasonings above. Mix. Add 2 cups chicken broth & can of diced tomatoes. Let boil.

Once boiles, reduce heat to medium low, cover & let cook for 25 minutes. I lowered mine to low after about 15minutes. I served it over white rice. Enjoy!

My boyfriend loves capers and lemon so I always try to find s solid recipe staple. Note to self- originally I subbed caper juice for the chicken broth which was wayyy too intense. Traditional Chicken Piccata the chicken is breaded just another low card change. Now, in Italy this would be made with veal, but here in the states they use chicken. So its actually an Italian/American dish. skunkmonkey101
