My mom made this when I was home last week so I found a recipe online that was similar and modified it a bit. Half-and-Half can be used in place of heavy cream.

Creamy Tuscan Chicken

My mom made this when I was home last week so I found a recipe online that was similar and modified it a bit. Half-and-Half can be used in place of heavy cream.

Ingredients

25 minutes
1-2 people
  1. For the Chicken
  2. 1 tablespoonolive oil
  3. 2chicken breasts
  4. Salt and Pepper
  5. For the Sauce
  6. 1/2 tablespoonButter
  7. 1yellow onion diced
  8. 1 1/2 tablespoonminced garlic
  9. 1/2 cupSun-Dried Tomatoes
  10. 6 ozBaby spinach
  11. 3/4 tablespoonItalian Seasoning
  12. 1/2 teaspoonDried Rosemary
  13. Salt and Pepper
  14. 1/2 cupGrated Parmesan

Cooking Instructions

  1. 1

    Heat olive oil in skillet over medium heat; season chicken with salt and pepper then place in skillet. Cook for about 7 minutes then flip and continue to cook for 6 more minutes, or until done.

    Remove chicken from pan and set aside

    Add butter to the pan and melt. Stir in onions and cook for 2 minutes. Stir in tomatoes next and cook for 1 minute. Next, stir in the spinach and cook for 1-2 more minutes, or until wilted

    Add heavy cream, Italian seasoning, rosemary, salt, and pepper; bring to a boil. Next mix in parmesan and stir until sauce has thickened. Once sauce has thickened, place chicken back in pan and cook for 1 minute

    Spoon sauce over the chicken and serve over your favorite pasta (optional)
