Prepare your ingredients. For the first filling, mix the tahini and honey well—it will thicken, but don't worry. In a separate small bowl, prepare the second filling by mixing the cinnamon, sugar, and walnuts together.

In a medium stainless steel bowl, dissolve the yeast and sugar in 1/3 cup (100 ml) warm water. Cover with plastic wrap and set aside for 10–20 minutes until the yeast is activated (it's ready when you see 1–2 bubbles).

In a second, larger bowl, mix the flours, mahlab, and salt. Add the activated yeast, olive oil, the remaining water, and vinegar. Knead until you have a smooth, elastic dough that doesn't stick to the sides of the bowl.

Cover the dough with plastic wrap and a towel. Let it rest in a warm place for 30 minutes to 1 hour, until it doubles in size.

Divide the dough into 6 equal pieces (about 2.8 oz or 80 grams each).

On a floured surface, roll each piece of dough with a rolling pin into a very thin, long rectangle (about 20 x 8 inches or 50 x 20 cm).

Preheat the oven to 340°F (170°C), using the bake setting.

Spread 1–2 tablespoons of the tahini-honey mixture in a thin line along the length of the dough. Then sprinkle the cinnamon-sugar-walnut mixture evenly over the surface to be rolled.

Roll up the dough (not too tightly) into a thick, long rope.

Twist the rope into a spiral shape. Lightly sprinkle with water and dust with cinnamon on top.

Line a square baking pan with parchment paper and bake for 25 minutes using the bake setting.
