During this pandemic, our stores are empty. There is hardly any meat. I've stocked up on things like frozen meat balls and SPAM. The turkey meatballs I have are not very good at all. This sauce covers the flavor up some.

Ingredients

1 packagefrozen meat balls
Sauce:
1/2 cupsoy sauce
1/2 cupwater
1/2 cupbrown sugar
1 tbsgarlic, minced *I used powdered*
1/2 tspginger, grated
1/8 tspred pepper flakes
Tbsoil
1 tbscornstarch *I used flour*

Steps

Warm meatballs through, in the microwave or on the stove. *I quartered mine and browned then in oil*

Meanwhile, mix sauce.

When meatballs are browned add sauce and bring to a boil. Simmer on low til it reduces to desired thickness.

Serve over rice with vegetables. *I've been adding lentils to a lot of dishes for the added protein and to make dishes go further*

Living up in the mountains, not always having the gas, time, or best weather conditions to get to town for groceries. We run out of things quickly and I have to use what I have. Though I now have a stove and oven, many of my recipes here were from when I didnt. I've had to get quite creative, and find other ways to cook. Like in a toaster oven and an electric skillet. I thought if anyone else has my same issues it'd be great to share my simple minimalist recipes. And find some great ones too.
