Ingredients

  • 2.2 lbsoxtail
  • 1/3onion, thinly sliced
  • 2 clovesgarlic
  • 2medium potatoes, cut into 6 pieces
  • 2carrots, sliced thickly
  • 2tomatoes, cut into 6 pieces
  • 1 tablespoonbutter
  • 6cloves
  • 1/3nutmeg
  • Green onions, cilantro, fried shallots, lime, emping crackers
  • Salt, sugar, bouillon powder
  • 6 1/3 cupswater (1.5 liters)

Steps

  1. 1

    Boil the oxtail briefly, discard the brown foam and dirty water (to ensure the final broth is clear, not cloudy)

  2. 2

    In a pan, add butter and sauté the onion, garlic, cloves, and nutmeg. Stir until fragrant, then turn off the heat

  3. 3

    In the slow cooker pot, place the oxtail at the bottom, followed by potatoes, carrots, water, sautéed onions, salt, sugar, and mushroom bouillon

  4. 4

    Set the slow cooker to high for 3 hours, then set to low for 4 hours

  5. 5

    Add the tomatoes just 5 minutes before serving

  6. 6

    Taste and adjust seasoning

    Serve with green onions, cilantro, fried shallots, lime, and emping crackers. If you like, you can add sweet soy sauce.

  8. 8

    Extra: make the sambal. Sauté 8-10 bird's eye chilies with 1 clove of garlic. Then blend. Serve in a small bowl.
