Ingredients

15 portions
  • 750 mlrolled or normal Oats
  • 500 mlMilk or milk alternative, buttermilk, almond, soy or coconut milk
  • 4Eggs
  • 30 mlMelted butter or oil
  • 2Apples cubed or preferably 2 sliced Bananas
  • 30 mlGolden Syrup, Honey or Maple syrup
  • 5 mlVanilla, optional
  • 5 mlCinnamon
  • 20 mlBaking powder
  • 2.5 mlSalt

Steps

    Process the rolled oats first in a food processor or blender until flour-like. Combine with wet ingredients including the apples/banana, blend until smooth. Gradually add the rest of the ingredients and blend till combined. Batter consistency can altered for making pancakes or crumpets by adding more or less milk/liquid.

    Pour around 60ml batter in a lightly greased medium hot pan. Fry till brown and flip over, repeat till both sides are brown, around two minutes per side.

    Alternatively process the dry oats first until a flour, place in a bowl and then mix in the rest of the dry ingredients. Blend the wet ingredients until smooth then add to the dry mixture. Whisk until the batter is smooth with consistency of thick cream, add milk if mixture is too thick.

I found that processing the dry oats in a blender or foodprocessor until a flour results in a smoother batter. Then combine all the dry ingredients in a bowl, blend all the wet ingredients and mix into the dry until a smooth batter.
